Simple Carbonaria
Description
The dish forms part of a family of dishes involving pasta with bacon, cheese, and pepper, such as spaghetti alla gricia. Indeed, it is very similar to the southern Italian pasta cacio e uova, dressed with melted lard and mixed eggs and cheese
Ingredients
2 bacon strips
600 ml Cream
600 ml chicken stock
300 g Mushrooms
1 brown onion
3 garlic cloves
parmesan
fettuccine pasta
Method
Chop up the bacon and fry in a large deep pan.
Once the bacon is on its way add in the onion and garlic.
Given them time to cook, add in the mushrooms with a splash of the chicken stock as needed to make sure nothing sticks.
Add in the cream.
Bring to the boil, and add the stock as needed.
Season with salt and pepper.
Simmer until ready to serve.
