Description

These wraps are a great refreshing meal. With very little preparation time and a very healthy dinner without sacrificing taste. Great on a hot evening. For my veggie lover friends, this recipe takes advantage of healthy filling chick peas!

Ingredients

Clear

500 g Chick Pea washed

2 tbs cumin powder

1 tbs olive oil

8 tomatos chopped and small cubes

0.5 red onion chopped

1 birds eye chilli chopped

1 medium chilli seeded and chopped

1 coriander bunch

1 Lime

Salt to taste

Pepper to taste

12 wraps

Method

Prepare the salad:

Chop up the tomato's and place in a large container.

Finely chop up the chilli's, coriander and red onion and add to the container.

Quarter the lime and squeeze the juice over the container.

Mix and stir all the ingredients in the container and salt & pepper to taste.

Add some olive oil to a medium hot pan and stir in the cumin powder.

Add the chick peas and cook until ready.

Heat the wraps in the microwave.

Assemble the wrap:

Add 1-2 table spoons of chick peas 3-4 table spoons of the salad mixture.

Add 1-2 tea spoons of the salsa if you want.
