Mmmmm Satay.

Ingredients

Clear

1 coriander small bunch chopped

1 red chilli

0.5 Garlic Clove

3 tbs crunchy peanut butter

1 tbs soy sauce

fresh ginger 2cm cube

2 limes

720 g chicken breast

To Serve

2 cups brown rice boiled

1 broccolini bunch, steamed

1 boc choy bunch steamed

Method

Place the coriander, red chilli, garlic, crunchy peanut butter, soy sauce, ginger and the rind of of two lines and the juice of one into a food processor and blend into a paste. Add a splash of water to help blend if necessary.

Prepare vegetables for steaming buy chopping into bite size pieces.

Place the brown rice in cold water in a bot and bring to the boil.

Cut the chicken into 2-3 cm cubes.

Put a deep pan on medium-high heat and a lug of olive oil. Add the chicken and season with salt and pepper.

Once the chicken is slightly seared, add in the satay paste and stir constantly, turn the heat down once the micture starts to boil.

Start boiling the vegetables.

Cook the chicken for about 8-10 minutes or until cooked to your liking.

Serve the brown rice, steamed greens and chicken satay mixture.
